Comparing Bridge cameras to EVIL cameras

The reason I prefer the bridge camera over an EVIL or DSLR is that there is no interchangeable lens.  Photography is my hobby not my job.  Dragging a bag  full of lenses is no fun.  My current bridge camera has an 18X zoom and plenty of control goodies.

When the fellow with a Nikon D700 tells me that my ape photo taken at the LA Zoo is excellent and shares his P&S photos why would I want to buy the more expensive camera that offers lots of nuisances with little of no improved photo quality?
